Join the FISD Culinary Team in Charleston, SC

Seeking a dynamic and hands-on Chef Manager to lead our culinary team at Charleston Collegiate School, a progressive co-educational, nonsectarian day school in beautiful Johns Island, SC. This role offers an exciting opportunity to manage and elevate both our culinary and food service operations, with the chance to contribute to a school community committed to sustainability and local sourcing.

Key Responsibilities:

  • Oversee all aspects of the food service operation, including inventory management, ordering, and receiving.
  • Ensure effective cost controls, menu development, and strategic purchasing, with a strong emphasis on sourcing and utilizing local, sustainable ingredients.
  • Manage the Monday through Friday lunch service, ensuring a high-quality dining experience for students and staff.
  • Assist with evening and weekend catering events as needed.
  • Drive the culinary success of the school by maintaining high standards of food quality, sanitation, and presentation.
  • Support the YMCA Camp account during the school's off-season, including the summer months, helping to manage culinary operations the account.
  • Manage P&L responsibilities and maintain a keen eye for operational efficiency.
  • Foster a passion for sustainability within the food service program.

Preferred Qualifications:

  • Working knowledge of HACCP (Hazard Analysis Critical Control Point) food safety standards.
  • At least 3 years of culinary management experience in education, contract food service, fine dining, or restaurant environments
  • Culinary experience in an educational environment desired.
  • Must have a strong understanding of inventory management and purchasing.
  • Expertise in food trends, production, sanitation, and food cost controls.
  • Experience with exposition cooking is a must.
  • Previous experience with P&L accountability and contract-managed services is highly desirable.
  • ServSafe certification is a plus.
  • Additional Information:
  • Mileage reimbursement, travel arrangements, and housing are provided when supporting the summer camp. The additional information will be further discussed during the interview process.
