Job Summary

As the Campus Executive Chef, you will be responsible for all culinary oversight of Manhattanville University's dining program, including resident and retail dining operations, campus catering, and off premise events as needed. You will create excitement by overseeing operations, in accordance with campus and company programs and guidelines. You will have responsibility to oversee all of the culinary team, and this position will be responsible to drive guest satisfaction and engagement!

Key Responsibilities

  • Plan and develop regular and modified menus according to established guidelines.
  • Work directly with the campus catering and special events team(s) to develop unique and creative catering menus for events and conferences.
  • Follow standardized recipes, portioning and presentation standards.
  • Create semester, weekly and monthly excitement in the dining rooms and retail by participating in educational events, creating tastings and pop ups, etc.
  • Complete and utilize daily production worksheets and waste log sheets. Taste completed meals to ensure quality.
  • Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards.
  • Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas. Ensure that kitchen staff follows and completes schedules as assigned.
  • Maintain inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed.
  • Make all decisions regarding utilization of leftover food products staying within Company guidelines for such products.
  • Comply with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits.
  • Follow facility, department, and Company safety policies and procedures to include occurrence reporting.
  • Participate and attend departmental meetings, staff development, and professional programs, as appropriate.
  • Work with campus and company leadership to help resolve guest concerns, which includes speaking with students and guests on a regular basis

Qualifications

  • Five+ years of progressive culinary/kitchen management experience, especially leading a team.
  • Working in a unionized environment is highly desirable.
  • Comprehensive knowledge of food trends with a focus on quality, production, sanitation, food cost controls, and presentation.
  • Experienced with computers; to include Microsoft Office (Word, Excel and PowerPoint), Outlook, E-mail and the Internet.
  • Catering experience a plus.
  • High volume, complex foodservice operations experience is highly desirable.
  • Comfort level with front of house customer service, including speaking to guests and helping to resolve problems as they arise.
  • Hands-on chef experience a must.
  • ServSafe Certification.
