Essential Job Duties
The Sports Nutrition Fellow will gain comprehensive, hands-on experience in collegiate sports
nutrition within the NC State Athletics Department. This position will actively contribute to the
Performance Nutrition unit, working collaboratively with assigned athletic teams, coaching staff,
and support personnel to optimize student-athlete health and performance through
evidence-based nutrition strategies. The Fellow will be mentored by full-time Sports Dietitians
and will be ready to apply to full-time entry level sports dietitians positions upon completion of
this fellowship.

This position will work in collaboration with athletics to support the advancement of the program
and provide high level nutrition support for student-athletes in line with the mission and vision of
the department. The fellow will work within the scope of their training and under the guidance of
the Assistant Athletic Director for Sports Nutrition to provide nutrition and hydration education
and resources to the student athletes. The position will complete a project related to their
fellowship under the supervision of their mentor.

Other Work/Responsibilities
The Sports Nutrition Fellow will gain a competent knowledge base and assist with providing the
following duties related to the NC State Sports Nutrition program. The Fellow will have various
projects and assignments related to developing this knowledge base and earn hours and
experience towards sitting for the CSSD exam. This experience will include but not be limited
to:

CLINICAL SPORTS NUTRITION

* Apply the nutrition care process to provide individualized, culturally appropriate,
evidence based Medical Nutrition Therapy ( MNT), education and nutrition counseling for
student athletes
* Engage in pre-participation physical examinations and utilize screening tools to identify
student-athletes at risk for nutrition-related medical and mental health diagnoses, such
as the athlete triad and energy deficiency, eating disorders, irritable bowel syndrome,
and other functional gut disorders, metabolic disorders and chronic disease
* Apply evidence based sports nutrition guidelines and MNT protocols for nutrition-related
diagnoses in collaboration with the athletic medicine team
NUTRITION EDUCATION
* Conduct sports nutrition educational sessions for teams, coaches, sports medicine and
sports performance staff and the broader athletics/university community as appropriate
* Instruct in the practical application of nutrition education via grocery store tours and
cooking demonstrations
* Develop nutrition education materials, web content and social media programs
* Supply nutrition education through high-quality training table meals, preworkout and
post-workout fueling, competition fueling and education directly from the plate during
individual meals or while serving in an advisory role
FOOD SERVICE MANAGEMENT
* Collaborate with dining services professionals on the planning, selection and delivery of
meals
* Set guidelines for menu planning and establish menu cycles to be implemented by the
dining services department
* Ensure that student-athletes with food allergies, religious preferences and clinical
diagnoses that require prescription diets have access to appropriately modified meals
* Set standards for and advise athletics operations staff on negotiating with food-service
providers for meal price and quality, particularly with respect to off-site meals
* Negotiate cost effective purchasing of NCAA-compliant products and supplements
* Provide food safety education for athletes and staff, especially as it pertains to the
storage and composition of food and meals away from dining facilities
APPLIED PERFORMANCE NUTRITION
* Offering team and individual nutrition education and counseling to enhance performance,
health and wellness
* Determining and developing applied performance nutrition strategies for individual
athlete and team training cycles to enhance overall performance and wellness
* Directing or conducting sweat and hydration testing, monitoring and education
SPORTS NUTRITION ORGANIZATION AND STAFFING
* Participate in program-wide strategic planning
* Collaborate on program and department initiatives
* Assign and delegate program responsibilities to student workers effectively
* Serve as an expert in nutrition science
* Demonstrate organization around billing and invoice procedures
* Monitor individual spending within framework of Olympic Sports Nutrition budget
* Adhere to all federal and state regulations related to the practice of dietetics and food
service
* Support a culture of supplement safety across the interdisciplinary departments and
sports programs
* Assess product selection and use for compliance with NCAA rules and regulations
* Evaluate meal and snack provision for compliance with NCAA rules and regulations.
Minimum Experience/Education
* Bachelor's degree in nutrition or closely related field
* RDN credential through the Commission on Dietetic Registration
* Licensed Dietitian Nutritionist ( LDN) credential in the state of North Carolina or LDN
eligible
